Design Brief
The renowned predecessor Flying Fish (Jones Bay Wharf) had set the benchmark for its sister outlet Flying Fish + Chips within the new dining precinct at The Star (Sydney Casino). The intention was that the fitout would echo a subtle visual connection.
The need for functionality necessitated Bongiorno Hawkins + Associates to take a pragmatic approach to ensure an ordered space evolved where the operations of the fast-paced front and back of house areas could synchronise.
Design Solution
The design brief predominantly revolved around a pragmatic configuration of the space. The owner wanted a seamless space that was tactile and finely detailed.
The conical-shaped dividing wall (likened to the rusted hull of a boat) functionally segregates the front and back of house areas and mimics the curvilinear form of the front counter. A service corridor was integrated to conceal frequent deliveries with glazed inserts to the ceiling level that create openness without compromising the continuity of the curved shopfront.
The design focuses on the interplay of texture and light using a neutral colour palette; punctuated by the vibrancy of the food display. The illuminated bar extension segments the counter and demarcates the food and beverage zones whilst emphasising the embossed motif on the service door.
The suspended acrylic sculptural piece, designed in conjunction with Yellow Goat takes centre stage - embracing the viewer and distinctively identifying "Flying Fish + Chips."
